Working as a team we do a deep dive into your health history to understand how your genetic risks and environmental triggers have created imbalances.  Ultimately, we focus on applying new nutritional therapies resulting from basic and clinical studies, especially in the area of nutrition and fasting, to trigger the body’s own ability to activate self- repair and regeneration processes.

Cancer Prevention through Nutrition

Research has shown that a healthy diet and lifestyle can significantly reduce the risk of developing cancer. In particular, diets rich in fruits, vegetables, whole grains, and lean protein sources have been linked to a lower risk of cancer. These foods contain nutrients and compounds that help to protect cells from damage, reduce inflammation, and support the immune system.

Nutrition is an essential component of cancer care. It can help to reduce the risk of developing cancer, improve outcomes during treatment, and reduce the risk of recurrence. Cancer patients should work with a healthcare provider and a registered dietitian to develop a personalized nutrition program that meets their individual needs.

ABOUT OUR FOUNDER

Prof. Valter Longo, PhD
The Founder of the European Longevity Institute

Valter Longo is Professor of Biogerontology and Director of the Longevity Institute of the USC (University of Southern California) School of Gerontology in Los Angeles, one of the most important centers for research on aging and age-related diseases. Professor Longo is also the director of the Longevity and Cancer research program at the IFOM Institute of Molecular Oncology in Milan in Italy.

In 2018 Prof. Longo was named by “Time Magazine” one of the 50 most influential people in the world in the field of health for his research regarding Longevity and the prevention of the most serious diseases.

Our treatment protocols are based on the 5 pillar system and clinical studies of Professor Longo, who proposed that we should focus on the root cause of diseases, rejuvenation and healthy longevity and not only on the treatment of an already advanced stage disease.

Diseases and Conditions

Supplemental Nutrition and Fasting-based Care is offered for the following conditions (along with other conditions not listed here):

Diabetes

In all types of diabetes there is abnormal carbohydrate metabolism that leads to high blood sugar. Type 1 DM is mainly due to autoimmune destruction of the pancreatic cells. Type 2 DM is far more common and tends to develop at an older age. It can be prevented and managed with lifestyle interventions if diagnosed early. Poorly controlled blood sugar over the years ultimately leads to multi organ failure involving the eyes, kidneys, heart, and nerves. Far too often patients are asymptomatic for years and interventions are not started until far too late. Whether you have Type 1 or Type 2 diabetes we can offer nutrition-based protocols to minimize medications, and in some cases, even halt and reverse your disease.

Obesity

The number of individuals impacted by excess weight and obesity globally continues to rise at an alarming rate. In 2020 obesity rates in the United states exceeded 40% for the first time in history indicating the epidemic levels of this disease. Impacting nearly 20% of young people age 2-19 and even higher rates in certain racial and ethnic populations this widespread problem will impact the development of many chronic diseases for years to come. Research has shown that overweight individuals have higher risk for high blood pressure, type 2 diabetes, high cholesterol, heart disease, stroke, osteoarthritis, physical pain and disability, mental illness and many common cancers. Our team is experienced in assessing risk and implementing proven lifestyle interventions that can address excess weight and reduce future risk of disease. . Prof. Longo and his collaborators have identified fasting-based nutritional interventions which reduce obesity without negatively affecting lean body mass and without changing the patient’s dietary habits for the great majority of the year.

Autoimmune

The rates of autoimmune diseases such as Rheumatoid Arthritis, Multiple Sclerosis, Crohn’s, Ulcerative Colitis, Hashimoto’s, psoriasis, lupus has surged in recent years. Patient’s may experience fatigue, joint pain, skin problems or digestive issues for years before diagnosis. Far too many patients are not diagnosed in a timely fashion because symptoms can be vague, common and without a specific blood marker. Our researchers have done extensive basic and clinical research to find safe and effective nutritional protocols that may reduce the inflammation and the need for medications. In some patients these interventions have lead to complete remission. Prof. Longo and his collaborators have tested or are testing the effect of these nutritional interventions in a series of clinical trials focused on autoimmunities including type 1 diabetes, multiple sclerosis, and inflammatory bowel diseases.

Cancer

Being the second leading cause of death globally cancer takes nearly 10 million lives annually. Unfortunately, despite extensive research and funding into better cancer medications we have not made as much progress as needed to tackle this disease in the last 50 years. Despite the knowledge that one third of cancer deaths are due to behavioral and lifestyle factors such as obesity, poor nutrition, smoking, alcohol and lack of physical activity, these interventions are underutilized in conventional oncology care. The researchers on our team have dedicated their life’s work to researching the nutritional interventions including fasting and protein restriction that can be safely combined with conventional oncology therapies to reduce cancer risk and recurrence and improve the efficacy of therapy. Our protocols aim to enhance cancer response to a variety of therapies, while at the same time activating protective gene in patient’s normal cells and tissues. Prof. Longo and his collaborators have tested or are testing the effect of these nutritional interventions in a series of clinical trials focused on a wide range of cancers and cancer treatments.

Cardiovascular Disease

Nearly 18 million lives are taken each year annually, making diseases that affect the heart and blood vessels the leading cause of death globally. Four out of five deaths related to these diseases are related to heart attacks and strokes. Patients are often asymptomatic for years with obesity, elevated blood sugar, cholesterol, and blood pressure before an acute event causes severe disability or even death. Prevention and early diagnosis are the key to reducing risk for these preventable conditions that respond so well to lifestyle medicine. By using advanced biomarkers and diagnostics in conjunction with heavily researched nutritional and fasting protocols, our team goes beyond the basics to assess and treat those at risk.

Preventive Medicine

The leading causes of death in the United States include heart disease, cancer, strokes, Alzheimer’s disease and diabetes. Earlier screening and detection is critical for implementation of effective and safe therapies that can halt, delay or even reverse many of these conditions. Our ability to detect subtle imbalances years before actual diagnosis and implementation of researched and proven nutrition and fasting protocols allows a greater chance of success in allowing patients to live longer, healthier lives. Prof. Longo and his collaborators have identified a nutrition program which includes everyday nutrition and a periodic fasting mimicking diet associated with improved longevity and health.

Testimonials

I love Kimberly, the dietitian I’ve been working with in dealing with cancer. So grateful to have found this place!
— lisa Brisse
I am extremely satisfied with the services I have received. I have been seeing a dietician that has help me learn to eat an optimal diet for a breast cancer survivor. It has been very reassuring, knowing that I am being guided by experts in the latest science on diet/disease.
— Anne Chinn
As a Registered Nurse, retired now for 20 years, with some of the typical health issues of aging in our society, I’ve been trying for years to find a dietician with a profound scientific base of knowledge as well as the compassion and communication skills to help me help myself with good eating practices. I’d been totally frustrated in this search until I came to be a patient/client of Kimberly Jacobson at Create Cures Foundation. I’d heard Valter Longo interviewed by Rich Roll on his podcast and was deeply impressed with his knowledge and approach, and also the idea of living not only with longevity but with health and vitality. I went to their website and called. I’ve been working with Kimberly for a few months now and have been helped enormously. Making dietary changes when it means going against the mainstream way of eating is SO NOT easy. First there is the knowledge component, but also, importantly, the emotional aspect. Even though I already knew quite a bit, I still find that there is so much more to learn and understand about diet and how MY body works, and how I can be my own best support. I’m endlessly grateful for the excellent guidance and support I’ve been getting.
